Ingredients
*1 bag of baby spinach
*10 cherry tomatoes
* 8 pitted black olives
* 2 eggs
* 1 tin of tuna (drained)
For the marinade
*1 tbsp olive oil
* 1 tsp lemon juice
* 1 tsp dried basil
* freshly ground black pepper
For the dressing
* 1 tbsp olive oil
* 1 tsp white wine vinegar
*1/2 tsp Dijon mustard
* 1/2 clove garlic
* 1 tsp dried tarragon
Method
- Place the eggs into a small saucepan and cover with cold water. Heat on medium heat until water is boiled. When boiling, reduce the heat and simmer for 8-10 minutes; depending on how you like your eggs.
- Place the spinach in your serving bowl.
- In a bowl mix all the ingredients for the marinade.
- Chop the tomatoes in half and add to the marinading bowl along with the olives. Stir and leave to marinade until the eggs are boiled.
- In a separate bowl, mix all the ingredients for the dressing until smooth. Drain the tuna and add to the dressing. Mix well.
- Place the tomato and olive mixture on the spinach and then add the tuna.
- Once the eggs are ready, leave them to cool for 5 minutes, then peel.
- Cut the eggs into quarters and place on top of the salad.
- Eat and enjoy!
