Healthy Spinach & Goats Cheese Salad with Maple Balsamic Vinaigrette - Recipe


Ingredients
* 1 bag of baby spinach
* handful of blueberries
* 6 strawberries
* 150g soft goats cheese
* 10g pecans
* 1 tsp olive oil
* 1 1/2 tsp balsamic vinegar
* 2 tsp maple syrup

Method
  1. Place the baby spinach in a serving bowl.
  2. Chop up the strawberries and add them to the bowl, along with the blueberries.
  3. Spoon the goats cheese into small chunks on top of the salad.
  4. Chop up the pecan nuts into small pieces and sprinkle over the salad.
  5. In a smaller bowl, mix together the oil, vinegar, and maple syrup. 
  6. Drizzle the vinaigrette over the salad and serve.

Chocolate Cupcakes - Vegan/Gluten-Free


Ingredients
* 2 cups gluten free flour
* 1 cup granulated sugar
* 1/4 cup cocoa powder
* 1 tsp baking powder
* 1/4 tsp salt
* 1 cup soy milk
* 6 tbsp rapeseed oil
* 1 tsp vanilla extract

Method

Preheat the oven to 180c. Place the sugar, oil and vanilla extract in a bowl and mix well.

Add the flour, cocoa powder, baking powder, and salt and whisk. 

Add the milk and combine until no lumps remain. 

Divide the mixture between 12 cases in a baking tray and bake in the oven for 20 minutes or until springy to the touch. 

Enjoy! 

Chocolate Icing (optional)
* 1/3 cup coconut oil
* 1/4 cup soft brown sugar
* 1 tsp vanilla extract
* 1/2 cup cocoa powder
* 2 cups icing sugar
* 6 tbsp soy milk

Lemon and Rosemary Marinated Lamb with Mashed Potatoes


Ingredients
* 6 lamb fillets
* 3 tbsp rapeseed oil
* 2 tbsp lemon juice
* 1 tsp garlic puree
* 2 tsp dried rosemary
* 1 tsp dried oregano
* 1 tsp garlic pepper
* 1 tsp ground black pepper

For the mashed potatoes
* 8 potatoes (Maris Piper works best)
* 2 tbsp butter or margarine
* 2 tbsp milk
* ground white pepper

Method

Preheat the oven to 200c. Place all the marinating ingredients in a large glass bowl and mix. Add the lamb and mix until all the lamb is coated in the marinade. Leave to marinade for at least half an hour. 

Peel the potatoes and rinse. Then chop them into small chunks and place in a large saucepan with boiling water. Cook for 20 minutes or until the potatoes are softened. 

While the potatoes are boiling, place the lamb fillets in a clean frying pan. Sear on all sides until there is some colour on each side. Place in a baking dish and put in the oven for 20 minutes. 

Once the lamb is cooked, cover in foil to retain the juices and allow to rest while you make the mash. 

Now time to make the mashed potatoes. Begin by mashing the potatoes to break them down. Add the butter and continue mashing until smooth. Add the white pepper and milk and continue mixing until all combined and smooth. 

If you would like, you can serve steamed green beans on the side. 

Plate up and serve with gravy. Enjoy!

Healthy Nicoise Salad Recipe


Ingredients
*1 bag of baby spinach
*10 cherry tomatoes
* 8 pitted black olives
* 2 eggs
* 1 tin of tuna (drained)

For the marinade
*1 tbsp olive oil
* 1 tsp lemon juice 
* 1 tsp dried basil 
* freshly ground black pepper

For the dressing
* 1 tbsp olive oil
* 1 tsp white wine vinegar
*1/2 tsp Dijon mustard
* 1/2 clove garlic
* 1 tsp dried tarragon

Method
  1. Place the eggs into a small saucepan and cover with cold water. Heat on medium heat until water is boiled. When boiling, reduce the heat and simmer for 8-10 minutes; depending on how you like your eggs. 
  2. Place the spinach in your serving bowl. 
  3. In a bowl mix all the ingredients for the marinade.
  4. Chop the tomatoes in half and add to the marinading bowl along with the olives. Stir and leave to marinade until the eggs are boiled. 
  5. In a separate bowl, mix all the ingredients for the dressing until smooth. Drain the tuna and add to the dressing. Mix well.
  6. Place the tomato and olive mixture on the spinach and then add the tuna. 
  7. Once the eggs are ready, leave them to cool for 5 minutes, then peel. 
  8. Cut the eggs into quarters and place on top of the salad.
  9. Eat and enjoy!

Healthy Chocolate Chip Cookies


Ingredients
*2 tsps vanilla extract
* 1 egg
* 4 tbsp soft dark brown sugar
* 1/2 cup melted coconut oil (I used Biona Coconut Oil Cuisine)
* 1 1/2 cups spelt flour (you can use gluten free if you prefer)
* 1 tsp baking powder
* pinch of salt
* 1/2 cup dark chocolate chips


Method

Preheat the oven to 180 c. Mix the vanilla extract, egg and sugar in a large mixing bowl. 

Add the melted coconut oil and whisk well. 

Add the flour, baking powder, salt and chocolate chips and mix until combined. Chill the dough in the fridge for 30 minutes.

Use an ice cream scoop to place the mixture into small mounds on two lined baking trays. Bake for 10 minutes in the oven and take out when slightly golden. 

Place on a wire rack to cool.

Enjoy!
